Lemon Rice Recipe


Lemon Rice is a tangy and aromatic South Indian dish made with cooked rice, lemon juice, and a flavorful tempering of mustard seeds, lentils, green chilies, and curry leaves. It’s perfect for lunchboxes or as a quick meal.

Ingredients


- 1 cup Cooked Rice (preferably cooled)
- 1 tbsp Oil
- 1/2 tsp Mustard Seeds
- 1 tsp Urad Dal
- 1 tsp Chana Dal
- 2 Green Chilies (slit)
- 1 Dry Red Chili
- A pinch of Hing (Asafoetida)
- 8–10 Curry Leaves
- 1/4 tsp Turmeric Powder
- Salt to taste
- 2 tbsp Lemon Juice
- Coriander Leaves for garnish
- Optional: Roasted peanuts or cashews

How to Make Lemon Rice


  1. Heat oil in a pan. Add mustard seeds and let them splutter.
  2. Add urad dal, chana dal, and fry until golden brown.
  3. Add green chilies, red chili, hing, curry leaves, and turmeric powder. Sauté for a few seconds.
  4. Add cooked rice and salt. Mix gently without breaking the grains.
  5. Switch off the heat and add lemon juice. Mix well.
  6. Garnish with coriander leaves and roasted peanuts or cashews if using.
  7. Serve warm with pickle or papad.
